Engine temp?

I am running a 468 BBC.  I am using water logs.  Whats a good engine temp to be running?  All the bearings and cam are still new.  I'm not sure how long to break in the motor.  Someone told me the motor will run warmer until it is broken in.  Not sure about that.

I always broke mine in for 10 hours, nothin over 3500 to 4000 and constantly chane rpms....No wide open passes.....thats just me though
